May has been quite the busy month already. I feel as if time literally slips from my fingers. There had been endless gym sessions, play dates, and so many tasty treats to keep up on. I'm sorry posts have been few and far between but this beautiful weather has me away from my phone and playing with my little lady. I'm not going to be out of a job forever so I need to spend every minute with my lady as possible. She's growing so fast before my eyes and every day is a new adventure. We are really loving the warm Rhode Island weather. I felt like it was never going to come.
Enough with the personal catch up... Food!
I love how much she loves her little friends. They fight like sisters but seriously love eachother. Friends are so important and I'm glad we can build her a solid foundation of friends and framily she can count on.
We made simple pizzas. I let a veggie tomato sauce simmer all day and had H prepare her own pie. She went with sauce and a little Parm. For mommy daddy pizza, I went with every cheese I could find in the fridge. These were really delicious, I'm a sucker for pizza though. I always top them with a hundred ingredients and try to have a meal right on the dough. It was a nice change up cheese, cheese and more cheese.
I love cooking, all different types of food. When it's hot I like to prepare quicker meals that don't require a lot of oven time.
Coffee, coconut sugar and spiced bacon- egg, avocado and cheesey sandwhiches on grilled honey oat bread
I don't like bacon a whole lot but these were to die for.
Eggplant Parm pizzas and zucchini pizzas with a side of sautéed veggies and local chicken sausage over arugula

This smoothie was perfect. Seriously, I love smoothies and this was a home run. I was out of bananas and didn't think a smoothie could be as delicious lacking my favorite ingredient but I was wrong. Avocado, galia melon, orange, pineapple, mango, cinnamon, ginger, coconut almond milk and pineapple mago peach juice. The top layer was a creamy concoction of honey Greek yogurt and the almond milk. Sooo delicious I called it the Golden Green Goddess smoothie. It was light, refreshing and went down way too quickly.
The last food share is homemade calamari. Oh my goodness. Thank you to my amazing husband who brought me home fresh squid. I marinaded it with curry, milk, egg, sriracha, ginger and 21 salute. Let it hang out in there for about an hour to get nice and tender.
Next is the dry mix; Panko, wheat flour, curry powder, paprika, turmeric, old bay, cumin and parsley. (If I had shredded coconut I totally would have added that)
I baked these in the oven for about fifteen minutes on 400. I told H that they were circle fish nuggets. Much to my surprise, she loved them. She asked for thirds and all that was left was the tentacles (I only had one of those they still eek me out a little) I cut it up and she scarfed it down. She also chowed down on the roasted vegetable medley of carrots, summer squash, sweet potato, bell peppers and onion. One of my favorite dinners in a while. I'm a big fan of sea food but we don't splurge too often.
I'll try and write more often but with this beautiful weather it's hard to keep my attention on this little screen for so long. I have been keeping up my Instagram posts. (( I have no idea how to link my IG to my blog))
