Subway. I friggen love it. I order the same Sammy every time.
Sweet onion chicken teriyaki on honey oat, toasted with provolone. All veggies except olives and jalapeƱos. Sweet onion sauce AND ranch. Don't knock it till you try it. Then you won't stop getting it.
What's even better, I shop so frequently at stop and shop that I have never ending buy one get one 6" Sammies. (Coupons on the back of shopping receipt.)
It's perfect for those days when it's raining, cold and you want nothing to do with cooking. Aka Sunday afternoons. So for dinner tonight H and I had subway. 2 sandwiches, a drink and two cookies for under $9. Now that's a bargain. I don't always splurge for cookies but today they were perfectly cooked I couldn't say no. We don't treat ourselves often with fast food, but I love that H can pick her own healthy options there. Today was meatball with cheese and extra "pittles" (pickles).

Last night though, we cooked.
We made daddy's favorite meal. Well almost, daddy likes using processed cream of soups, but I made my own. I know he would have preferred the can, but compromises. :)
So I give you.... Chicken dish
Roll over meal number four for beercan chicken. The key to this is simple.
Cook chicken rice-a-roni by directions the box. Instead of using water I used the homemade chicken stock.
Next start the Roux (fat and flour to make a thickening sauce- traditional bechemels are started this way.)
About two tbl of butter a splash of oil
Simmer chopped mushrooms and celery
Add thyme and chives (or omit)
Add two tbl of flour
Wisk until the flour browns (not burns) it will give off a nutty aroma
Slowly stir in 1 1/2 cups chicken stock and 1/2 cup milk
I add a little Parmesan cheese at this point
I added 1 cup chopped beercan chicken
Once rice is cooked, stir in homemade cream of soup
Add about a 1 cup mixed cheese of your choice. Cheddar is always a good start
Sprinkle with more cheese
Bake 350 for about 30 minutes or until golden brown and bubbly.
We eat ours with apple sauce and cranberry sauce.
