Winter Chopped Salad


I used to make salad every night with dinner for the King and I. Then we had a baby and now I'm lucky if I get to sit for ten minutes during dinner time. "Mom napkin please" ::sit down:: " more milk please" :: sit down:: "I'm done, wash my hands with soap please" ::: first bite:::
So now when I have salad it's a dinner salad, and this was the cream of the crop of dinner salads. 

Start with making Orange Marmalade Caramalized Onions
1 medium sized red onion
2 tbl coconut oil
Heat the oil and start caramalizing
Throw a dash of cinnamon and allspice
Pinch of salt
Cook down for about ten- fifteen minutes

2 tbls of fresh squeezed orange juice
1 tbl balsamic vinegar 
Cook for ten more minutes 

Add 2Tbl orange marmalade and cook down while we prepare the rest of the salad

2 small heads of sweet gem lettuce (found at trader joes)
1 stalk celery chopped
1 carrot chopped
1 small head broccoli chopped
1 small pear chopped
1 green onion chopped 
1/2 cucumber chopped
1 small beet roasted with cinnamon and coconut oil- chopped
1/2 cup blueberries
6each- yellow and red tomatoes

Rip apart lettuce and disperse between two bowls
Chop all Ingredients (except blueberries and tomatoes) and throw in a bowl
Toss orange marmalade onions in with chopped veg
Seperate between two bowls
Top with blueberries and tomatoes

Top each bowl with a heaping tbl of sweet honey goat cheese and a drizzle or Trader Joes Sriracha BBQ sauce
