We collect coke rewards so when their are fun shutterfly promos, my lovely husband scoops them up. This time was the calendar and an Alphabet book for H, which hasn't arrived yet. This particular time, the code expired at the end of last month. I had been working on the calendar for about a month. At the end of January we had a huge snowstorm and when I came home, the little lady and I both got sick. The due date for ordering my free book and calendar came and went. I was really discouraged. It was about a $60 value. I was pretty disappointed for forgetting, and letting that great opportunity pass by for some printed memories. I emailed the customer service. I explained about the snowstorm, and getting sick - and guess what? They reimbursed both promotion codes for me. I thought that was pretty amazing. It also keeps a loyal customer coming back, so thank you Shutterfly for your awesomeness!
Speaking of snowstorms, it's snowing again today. It actually looked pretty falling today. They were big fluffy fakes slowly falling all day. But they don't fall strait down, they kinda dance back and forth.
First thing in the morning H likes her bowl of cereal. She's pretty funny; she likes a combination of Rasin Bran,(calls it the sun come up cereal), and Kashi (the good one or crunchies), sprinkled with cinnamon and a touch of agave. Anyways, when she's eating I'm kind of- just waking up. We chat and I have my lemon water, but mostly I just watch her. She eats in a daze, most days. And it's pretty damn adorable. I catch her in amazement, just following the flurries falling in jagged motions. She moves with them. Subconsciously, back and forth. I could watch her all day. Mornings are my favorite though. She's so innocent and loving.
A few hours later my belly starts talking. Hadley's favorite meal, brunch. And today, we made Waffles!
I used a mix of Trader Joes Coconut pancake mix and Krustez waffle mix. Instead of egg and butter, I used coconut oil and applesauce. Added a mashed banana, cinnamon and a whole lot of blueberries. They were really good.
For dinner we kept it simple. Trying to use up our weekend leftovers.
Hawaiian Crescent Rolls with warm kale salad
1 package trader joes crescent rolls
1/4 cup Pineapple-mango salsa
3 oz thick cut chopped ham (I use honey ham)
3 oz shredded cheese- I used Colby jack
Separate all the crescent rolls
Mix all ingredients in a bowl - keep about 1 tablespoon of cheese aside. Sprinkle the reserved cheese on the crescent rolls. Add about 1 big tablespoon of mix to each crescent. Roll up and bake 11 minutes.
I had mine with a warm kale salad. I sautéed ginger and chili pepper in a small saucepan. Add 2 button mushrooms and 2 baby Bella mushrooms, sliced. Add two cups of Chopped kale and two tablespoons of pineapple salsa. Cook down and add a little Sriracha BBQ.
